Let me share with you one of our favorite, healthy, rich and delicious comfort soup recipe that works perfectly with this cooling weather. I shared the photo above on Instagram a couple of weeks ago and I have been asked for the recipe ever since. Everybody in our family loves it and honestly it’s really easy to make. I am not following any specific recipe, I have been adapting it over the years and I usually make a bigger pot so that we can have it as left overs for 1-2 days. The amount of veggies can vary too, depending on your preference. If you like the soup lighter, add less vegetables, I usually add a lot of them and the soup it’s pretty thick.
BEET SOUP / For proximately 5 Liters/ 170 Oz of water, you will need:
3 tablespoons olive or sunflower oil
1 medium onion, peeled and finely chopped
2 large beets, peeled and chopped
2-3 potatoes, peeled and chopped
3-4 carrots, peeled and chopped
a little piece of celery root, peeled and chopped
1 parsley root, peeled and chopped
a few ribs of celery, sliced
fresh parsley leaves, chopped
2-3 tablespoons vinegar
salt and freshly ground pepper
DIRECTIONS: Heat the oil in the pot on low heat, place the chopped onion and cook for a few minutes until soft but not browned. Stir in beets, and cook for 1 minute. Add the rest of the chopped/sliced vegetables and water and leave everything to boil (around 20-30 min) on medium heat, stirring occasionally. Season lightly with salt and freshly ground pepper. Once the vegetables are tender, remove from the heat and add 2-3 tablespoons of vinegar. Allow the soup to cool slightly and serve it with 1-2 spoons of sour cream, a few chopped parsley leaves and s+p according to taste.
